We are quite some fans of New York Fries. And when we do manage to travel to the City Centre to dig in, we really do. These are seasoned with several toppings – chicken, veggies, meat – and come with Mexican, regular and classic seasoning. But a couple of days ago, when we felt like NYF, I decided to make them at home – from scratch.
It’s quite simple, really. Chop a few potatoes into fine strips and mix them in a teaspoon of olive oil. Take two tablespoons of cheddar cheese powder and mix in it black pepper, a little ginger and garlic powder and a pinch of mango powder.
Coat the potato sticks with this mixture and pop into an oven at high heat for 15 to 20 minutes.
Separately, finely chop two onions and a tomato and shallow fry using a pinch of oil in a non-stick pan.
Remove from oven and throw in the tomato-onion mixture. Garnish with coriander leaves and finely chopped capsicum.
Serve with regular mayoniase and/or cheese spread. Hot or regular ketchup is also an option.
