Pan-fried Jalapeño chicken

20140919_203344This is perhaps the “quickest” chicken dish I have made in some time. Somehow, on weekends, we seem too have  much less time on our hands than on regular working days since we are too busy feeling lazy. At the end of the day, therefore, it’s these “quickies” that come in handy.

Take one medium-sized chicken cut into small pieces. Fry it in handful of finely-chopped ginger, garlic and whole red chilli’s over a low flame until it starts to turn brown. Add salt, a little black pepper and a pinch of red chilli powder. Also add four coarsely-chopped medium-sized onions and stir. Put in a few tablespoons of water and cover for a few minutes. Chicken is normally tender in around 15 minutes.
Serve with roti (flatbread) or naan after garnishing with sliced red Jalapeño peppers.

    I am curious how you make your naan and roti? I think I will try this jalapeno chicken this weekend!

  2. Thanks for the ‘like’. We do not make naan, only roti (flatbread). The wheat flour has to be kneaded with water and turned into a soft lump. Small balls are then made and rolled with a rolling pin until it is around 6 inches in diameter. That is then roasted on a non-stick flat pan until cooked. But, realistically speaking, it’s difficult to explain. One has to actually do it. Perhaps a YouTube video will help!
