Garden omelette

moV2sThis is yet another easy to make weekend breakfast – one that any ‘half’ of a couple can make within a few minutes – as the other half lazes around!
I would call it the ‘cheat’ omelette since I used frozen mixed vegetables instead of cutting and chopping them (had to be quick, isn’t it?)
Anyway, finely chop a few cloves of garlic and a small piece of ginger. Throw in pan and add a handful of mixed vegetables. These consist of carrots, beans, green peas and corn. Add a little salt, one finely-chopped red chilli, a pinch of chill flakes and a pinch of coriander powder. Shallow fry in a teaspoon of oil for five minutes. When done, shift to a plate. stdOy
In a small serving dish, whisk three eggs, add a pinch of salt and a pinch of black pepper powder. Pour into the already hot pan and spread all over. Throw in the mixed vegetables and spread evenly. Reduce flame to the minimum and cover for two to three minutes. The omelette is then done.
For added ‘effect’, turn the omelette over for a few seconds and serve, ideally with bread and tomato ketchup, though I used hot sauce! Garnish with coriander leaves, also for ‘effect’ – and taste!
