This is the ‘twisted veggie basket’ I am so comfortable with. It’s quick, tasty and healthy and it’s a whole meal in itself.
All one needs is a few vegetables. Though I only used sweet potato, potato, zucchini, cauliflower and onions, one can used as many as possible (except tomato).
Simply chop everything into small slices or pieces, put in a large baking dish, sprinkle some salt, a little bit of cumin powder, a few red chilli flakes, black pepper powder and one tablespoon of olive oil. Mix well and pop into an oven on high heat for 15 to 20 minutes.
Serve hot. One can have this with bread but is perfectly okay with nothing else. ENJOY!
