Karela Sharela

20141018_183536This is an original karela (bitter gourd) dish. Yes, it is bitter but made in a very ‘twisted’ way – completely different and very simple!
It’s actually quite simple. Take two large bitter gourd and shave off the outer cover but do not discard the shavings.
Cut the gourd into thin slices and put into a non-stick pan on low flame after adding two to three tablespoons oil. Coarsely chop a large onion and add into the pan after around five minutes. Throw in salt, red chilli powder, a pinch each of cumin and coriander powder and a pinch also of garam masala.
20141018_182527Fry for another 10 minutes or until the gourd becomes brown. Then add the shavings, stir, and cover for three to four minutes. Sprinkle a little dry mango powder just before serving.
The karela sharela is ready!
Just a word of caution. This a bitter preparation and not everyone’s plate of food. However, for karela fans, it’s a winner all the way!
