Raraa Alooo Wala

20141021_205815This is not the way mutton curry is ordinarily made but, with me, cooking is different. It is certainly not about stereotypes and it’s certainly not many of us would admit they would like to eat and dub it bland!
The dish is incredibly simple to make with just a little masala, onion, tomato, garlic and ginger.
Take two large onions, a large tomato, six cloves of garlic and a finger length of ginger. Toss into a blender and make into a paste. Put into a a pressure cooker on high heat and throw in a kilo of mutton chunks. Add salt to taste, a teaspoon of red chilli powder, half teaspoon each of coriander and cumin powder and a teaspoon of garam masala.
Cook for 15 to 20 minutes or until the oil separates from the masala and mutton. Add half a litre of water and cover until the cooker ‘whistles’  five or six times.
Open and add two potatoes and boil without pressure for 10 minutes. The mutton is ready!
Serve with steamed rice, flat bread or naan!
