Methi Chicken

20141208_131305This chicken dish is, once again, my trademark. Quick, simple and healthy! Looks very appetising as well – and it is!
A medium-sized chicken, two onions, a large tomato, a generous amount of ginger garlic paste, some chicken masala, salt, turmeric and red chilli powder is all you need , besides, of course, Methi (Fenugreek) leaves.
Lightly fry the chicken pieces in two tablespoons oil along with the ginger garlic paste diced tomato and finely-chopped onion for around 20 minutes.
Add the chicken masala, salt, red chilli powder and turmeric and cover for 10 minutes or until the oil begins to ‘show’.
Then add the Methi leaves, already boiled and kept aside. I used the frozen ones from the local store.
Cover again and let it simmer for another few minutes.
Serve hot with either Indian bread or rice.
It’s simply – a winner!
