It was one of those nights when we needed a quick meal. And what better way to toss a chicken into the oven to defrost, chop some onions in the meantime and put the two all together into the pan. Yes, that” what I did and came up with this rather delicious, and very simple, preparation.
Just take a kilo of chicken, add two or three coarsely chopped onions, two teaspoons of ginger garlic paste, sat and a teaspoon of red chilli flakes. Fry in two tablespoons oil for five minutes and cover. Tun the head to low and cover for 15 to 20 minutes.
Uncover and throw in a bunch of sliced red jalapeño peppers and there you have it. I couldn’t believe how delicious it turned out to be. One can serve with white rice, brown or white bread. Any which way, this one’s a winner. The only consideration, of course, is that it has to be slow-cooked. And, boy, was it hot!
