Pasta and sausage casserole

DSC_0308DSC_0310DSC_0313DSC_0327One of my weekend favourites is the casserole but it’s always a challenge what to make it with. Of course, there is pasta, there could be mashed potatoes and there are vegetables. But today, I also used sausages – chicken sausages!
Boil the pasta and the sausages in different pans, drain the water and keep aside. Also snip the sausages into small pieces, making three out of one.
In a wok, fry a handful of mixed vegetables (carrot, beans, capsicum, mushrooms, cauliflower, cabbage and peas) for five minutes and in two or three tablespoons oil and then throw in the sausages and the pasta.
Add salt to taste, a teaspoon of garlic-ginger paste, a tablespoon of red chilli flakes and half cup of olive pasta sauce. Cook for 10 minutes and pour the mixture into a large glass dish. Sprinkle Mozzarella cheese and bake in oven for 10 to 15 minutes.
The casserole is ready!
