Cheesy Weekend!

DSC_0335The weekend is always somewhat relaxed but this Friday and Saturday have been anything but! That meant we had to come up with some really quick meals.
First it was the pasta casserole and then I hit upon the vegetable cheese sandwich.
Yes, it was a rather “cheesy” weekend but then, how does that matter? I am not into healthy foods – there are plenty others who look at that and describe in minute detail how to go about preparing those dishes!DSC_0329
My cheese sandwich is really simple. Chop a lot of different vegetables – I took onion, tomato, carrot, capsicum, beans and green peas – and lightly sauté them in a teaspoon of oil. Transfer into a glass dish and throw in a handful of shredded mozzarella cheese. Add salt, some black pepper powder, red chilli flakes, a teaspoon of olive oil and a teaspoon of chat masala. Mix well.
Spread the mixture on a piece of bread, put a piece of salami on it and cover it with another piece of bread. Grill in sandwich maker for three to four minutes.
Serve streaming hot after shaping into triangles!DSC_0330

    looks yummy, ,,,a vegetarian version can be made by just replacing the salami with Cheese slice…..

    1. True. But that would make it even more cheese. And it would overwhelm the taste of the vegetables. That said, it’s a personal choice; one can ‘doctor’ it anyway one wants!
