Paratha Andey Wala

DSC_0673The weekend – nothing to do at home – lazing around – and ann overkill of the computer – collectively inspired me to make these lovely-looking paratha (stuffed Indian flat-bread).
Looks very simple but it requires some practice, patience and, of course, a knack for being successful in the kitchen.
First knead some dough, with a small bowl being just about right. Keep aside (look at the video for reference)
Separately, take three eggs, whisk them, add chopped tomato, onion and green chilli, salt and red chilli powder to taste and scramble them. Also keep aside!
Now make the paratha (look at the video for reference).
Here, however, is the catch.
The paratha has to be taken off the pan the moment it is browned on both sides and, picking up a layer from one side, the scrambled egg is to be inserted within, taking care to spread it evenly.
After that is done, finish off the frying process and make parathas one by one.
Cut into smaller triangles and serve (as shown)!
Of course, again, the egg can be substituted with minced meat, vegetables, or crushed kidney beans, as one may want!
